Curry is wildly popular worldwide, but you’ll find that this recipe, in particular, is heavily influenced by its south and southeastern Asian points of origin – India, and Thailand! Weeknight Meal Prep Made Easy

Do yourself a favor and make some amazingly tasty curry bombs. They’ll make weeknight meal prep a snap. Thirty minutes or so should do it!
Vital Ingredients

- Whole coriander seed (2 tablespoons)
- Whole cumin seed (2 tablespoons)
- Black mustard seeds (2 tablespoons)
- Whole black peppercorns (2 teaspoons)
- Optional red pepper flakes (½ teaspoon)
- Kosher salt (1 ½ tablespoon)
- Coconut oil (½ cup)
- 3 large onions (coarsely chopped)
- Turmeric (1 tablespoon)
- 1 head garlic (cloves peeled and crushed)
- 1 4-inch piece of ginger (pre-peeled and thinly sliced into coins)
- Water (⅓ cup)
- Tomato paste (¼ cup)
- Optional lime juice (2 tablespoons, freshly squeezed)
Steps to Follow
So now that we have everything we need, let’s put it all together. Begin by toasting the coriander, cumin, mustard seeds, black pepper, and red pepper. Don’t leave out the salt! Combine everything in a dry skillet held over medium-high heat. This part of the cooking process only needs about three minutes. Let the ingredients sit in a bowl to cool down.
Using the same pan and heat level, heat the coconut oil. Then add in the onions and turmeric. Cook but don’t cover, and keep stirring. They’ll turn translucent and golden brown after about 10 minutes.
Take the toasted spices, throw them in a blender, and then grind them up. After that, toss in the garlic and ginger. Pour in the called-for amount of water and then set to pulse. The pureed mixture you receive is called a slurry.
Pour the slurry over the onions and use a wooden spoon to stir as it cooks. Eight minutes later, add the tomato paste. Continue cooking and stirring. Once the paste darkens, it’s time to distribute it. Separate your concoction into silicone cupcake liners or freeze some ice cube trays in a pinch.
