Sometimes when you’re craving something spicy you want something fast, easy, and light. Sangchu-geotjeori, or spicy Korean salad, is the perfect solution. Sometimes when kimchi gets old and sour we desire something that isn’t so aged. Unlike kimchi, this dish is a lightly seasoned spicy salad that is meant to be eaten right away. Geotjeori, or fresh salad dish, is an excellent everyday dish or side for a bulgogi, kalguksu (warm noodle soup) or bibimbap dinner. If you’re a fan of spicy you’ll go crazy for this dish. Here’s a quick rundown on how to make Sangchu-geotjeori. Try it out!
Spicy Korean Salad: What You’ll Need
- ½ pound (8 ounces) green or red leaf lettuce
- 2 minced garlic cloves
- 1 chopped green onion
- ¼ cup thin sliced onion
- 2 tablespoons soy sauce
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 1 tablespoon white vinegar
- 2 tablespoons crushed red pepper flakes
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
Including all the essential Korean ingredients. For vegetarians, substitute the fish sauce with salt or additional soy sauce. Also note, summer napa cabbages are perfect for Korean salads due to their smaller, thinner leaves. If you have a larger cabbage, try to use the inner parts that are more tender. Corn or rice syrup may also be used in place of sugar, which is necessary to round out the flavor due to lack of the natural sweetness from fermentation.
Directions
Step 1: Assemble ingredients and wash the lettuce. Drain and remove excess water from the lettuce. Tear lettuce into bite sized chunks and then set aside.
Step 2: Use a large mixing bowl to combine and mix together garlic, green onion, onion, fish sauce, sugar, vinegar, red pepper flakes, and sesame oil.
Step 3: Combine the lettuce and seasoning mixture. Gently mix together by hand or with a fork.
Step 4: Finally, sprinkle on the sesame seeds. Serve immediately as pair with rice or bulgogi. That was easy, right?
