Korean tacos are a new, innovative food trend that’s rapidly taking over America. It all began with Roy Choi’s Kogi BBQ food truck in Los Angeles, but the Korean-Mexican fusion dish has been rapidly growing in popularity in urban areas all across the United States. Korean taco food trucks have been springing up in cities like Seattle, Austin, and Washington D.C. The unique mashup of Korean and Mexican culture has made Korean BBQ more accessible to American audiences.

Typically, Korean tacos consist of Korean-style fillings, such as bulgogi meat or kimchi, served on top of traditional Mexican tortillas.

 

Simple Korean Taco Home Recipe

Ingredients

  • 3 pounds beef short ribs, off the bone.
  • 1 cup soy sauce
  • ½ cup mirin
  • ½ cup dark brown sugar
  • ¼ cup sesame oil
  • 6 garlic gloves
  • 6 scallions
  • 2 teaspoons fresh peeled and grated ginger

Make Your Korean Tacos

Start by cutting excess fat from your short ribs and then slice the beef into thin 1 ½ inch pieces. Place the pieces into a large bowl or container.

Blend soy sauce, mirin, sugar, sesame oil, garlic, scallions and ginger in a blender or food processor. Pour half the marinade over the short ribs and refrigerate for at least 3 hours. Heat the other half of the marinade in a pan on medium heat, and stir until the mixture achieves a thick consistency.

Set your griddle to high and cook the short ribs while caramelizing the marinade. Cook for two to three minutes and then flip.

Grill each side of your tortillas for 45 seconds. On the grilled side add the beef and drizzle marinade on top. Add Sriracha for some extra bite. Finally, dig in!

 

Korean-Style Slaw

Ingredients

  • 3 cups chopped Nappa cabbage
  • 1 cup sliced daikon slices
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons extra-virgin olive oil

Mix together in a bowl to add a Korean-style slaw to your tacos.

 

Korean-Style Dressing

Ingredients

  • 2 limes, juiced
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons Sriracha
  • 2 tablespoons extra-virgin olive oil

Give your Korean Tacos some zest with this Korean-style dressing. Whisk together lime juice, soy sauce, mirin and Sriracha. Then slowly whisk in the olive oil. Refrigerate until ready to use.
