The Vietnamese banh mi sandwich is a delicious fusion of flavors both eastern and western. A souvenir of French influence over Vietnam was their iconic French bread. From the French bread sprang the idea for an awesome sandwich. In this blog, we present to you a recipe for a delectable vegan sandwich with grilled tofu and featuring an intriguing lemongrass and coriander marinade.

So, How Do You Make This Banh Mi Sandwich?

This sandwich recipe should yield 4 to 6 wondrous servings. It should take 45 minutes in both active and total time. See below for some of the ingredients!

What You Will Need:

1 pound extra-firm tofu, cut into 1/3-inch slabs, and carefully dried

1 recipe for Vietnamese Pickled Carrots and Daikon

3 to 4 Vietnamese-style baguettes, or 2 standard baguettes

6 medium cloves garlic

12 sprigs cilantro, including thick stalks

3 tablespoons palm or light brown sugar

2 teaspoons ground white pepper

1 teaspoon ground coriander

2 teaspoons soy sauce

3 tablespoons vegetable oil

1/4 cup homemade or store-bought vegan mayonnaise

2 teaspoons liquid aminos

1 cucumber, seeds removed, split lengthwise into 8 pickle-sized spears

1 jalapeño pepper, seeds and stem removed, also sliced into thin spears

1 bunch cilantro leaves and fine stems

2 (3-inch) segments lemongrass

 

Directions for the Banh Mi Sandwich

You can cook everything by using the grill for about 20 minutes, or by using the broiler also for about 20 minutes.

Start by combining the garlic, cilantro, sugar, white pepper, coriander, soy sauce, lemongrass, and then half of oil in a bowl inside a food processor. Create a paste with these ingredients. This should take about a minute. Slather this mixture on the slabs of tofu. Make sure you stack the tofu on a plate or in a container for the time being.

Cook the tofu and then combine the oil and marinade that is left. On a large plate or cutting board, spread the remaining mixture of oil and marinade over the cooked tofu. Make sure you cut the pieces of tofu to be narrow enough to fit on the baguettes. Cook again until crisp, add toppings, and serve! Save room for dessert!
